Oleuropein is the most prominent phenolic compound in olive leaf extract with a concentration of 140 mg g-1 dry matter in young olives and 60-90 mg g-1 dry matter in leaves. The main bioactive compounds are apigenin, luteolin, oleuropein, verbascoside and triterpenoids (oleanolic and maslinic acids).
