Thymus vulgaris, Thyme, is a plant of the Lamiaceae family and is particularly native to the Mediterranean climate. This plant is usually found in the form of a perennial shrub with densely branched and woody stems, growing to a height of 15-30 cm. Thyme grows best in well-drained soils containing limestone and prefers full sun, so that it can produce its aromatic oils to the maximum. The leaves of the thyme plant are small, oval-shaped and slightly curved at the edges. The upper surface of the leaves is dark green, while the lower surface has a lighter shade of green and both surfaces are covered with fine hairs. The flowers of the plant usually bloom in summer, between June and September. The flowers are collected in small, dense clusters in the axils of the leaves and typically range in colour from light purple to white.
