Carrot (Daucus carota) is a species of biennial root vegetable belonging to the Apiaceae family, cultivated worldwide. It is usually orange in colour, but also has different colour variations (yellow, purple, red). The leaves are thin, long and feather-like, while the root is fleshy and juicy. Carrots are consumed especially the root part below the soil, which contains high amounts of beta-carotene. It shows the best growth preferably in slightly acidic and well-drained soils. Carrots also provide a good crop yield in humid climatic conditions and are popular as a vegetable that can be grown in a short time. The plant, which has a taproot system, provides a good root development in light textured soils. Root size varies considerably according to commercial varieties. The root part of the plant, which is consumed as a vegetable, matures in the first year, and flower and fruit formation takes place in the second year. The flower structure is umbrella-shaped and the seeds are quite small.

Major Active Ingredients and Proportions

Carrots are characterised by their rich nutrient content, especially their high beta-carotene content. The beta-carotene content in carrot root can vary between 6-15%. This powerful antioxidant is converted into vitamin A in the body and is important for eye health, immune system and skin health.

Carrots are also a good source of vitamin C which contains 5-10 per cent vitamin C. In addition to being a powerful antioxidant, vitamin C is also essential for collagen production and strengthening the immune system.

The fibre content in Carrots varies between 2-5% and contributes to digestive health.

Other Molecules: Alpha-carotene (2-6%), lutein (0.5-1%), lycopene (0.1-0.2%), potassium (3-5%), folic acid (0.01-0.02%), various minerals and antioxidants.
