Liposomes are bilayer spherical lipid vesicles composed of polar lipids used in the pharmaceutical, personal care, chemical and food industries to encapsulate both hydrophobic and hydrophilic compounds. It is formed as a result of dispersion of polar lipids in a polar medium such as water. It has been observed that the agents encapsulated with liposomes prevent decomposition reactions that can occur with the effect of the external environment, thanks to the interruption of their interaction with the system they are in, and the controlled release of active agents into the environment can be realized, thus the encapsulated compounds such as antimicrobial, antioxidant, vitamins are more resistant to processes such as pasteurization, drying, cooking, frying.
