Garlic (Allium sativum L.) is a spice that is widely consumed in the world. It is an annual herbaceous plant. It forms seeds, but is usually clonally propagated. Cultivated garlic contains many teeth on the same head. However, natural garlic species contain only the head and no teeth.
Garlic contains about 2,5 to 4,5 mg allicin per gram of fresh weight when it is crushed. It is a plant rich in flavonoids. The amount of essential oil varies between 0,09-0,2%.
