Liquorice is a perennial evergreen shrub-shaped plant. It is especially spread on river edges, field edges and watery places. The roots of the plant contain sweet substances. Flowers and pods are formed on the stem. Seeds are quite hard and germination is low.
The roots of the licorice, which belongs to the legume family and is widely used around the world, are used for medicinal and aromatic purposes. Triterpenic saponisides obtained from the roots and rhizomes vary between 5-13% depending on the region. It contains a material called glycyrrhizin and melts quickly in hot water. It contains more than 30 flavone glycosides.
